Saffron is a spice which has been used around the world for hundreds of years. It adds flavour, colour and aroma when used in cooking. It comes from the bulb of the Crocus sativus. Each crocus bulb produces several flowers per season. Each flower contains three bright red stigma, (the female part of the flower), which when dried becomes the spice saffron. It takes hundreds of crocus sativus flowers to produce 1 gram of saffron. Saffron has been grown commercially in Australia since 1991. Below are some pictures of saffron flowers.
